These apps have no accounts and no servers of their own. What you do in them stays on your device. The only personal data that leaves your phone is what Google's advertising SDK collects in the apps that show ads, and that is listed below.
Location, saved items, settings, history, photos, audio recordings and sensor readings are held on the device and are not uploaded. Apps that use location do so to sort or filter content locally. Apps that record audio or use the camera process it on the device unless their own screens say otherwise. Deleting the app deletes this data.
Some apps fetch public data files — for example Sea Temperature downloads a daily temperature feed. These are plain file requests. Nothing about you is sent with them beyond what any web request carries.
Apps that show ads use Google AdMob. Where an app does not ask for App Tracking Transparency permission, it requests non-personalised ads and no advertising identifier is used. AdMob may collect:

Subscriptions and in-app purchases are processed by Apple. Apple tells the app whether a purchase is active; it does not share your payment details, and we never see them.
These apps are not directed at children under 13 and do not knowingly collect data from them.
